storytime (and a few updates!)
I’ve been finding myself scrambling in the kitchen a LOT!
I recently moved into a new space and have fallen in LOVE with the small kitchen and the coziness it’s provided in the past month of my living here.
First off, I have a GAS STOVE?!
I love gas stoves, wholeheartedly. They’re a pain to clean but feel so luxurious. It even has a MIDDLE BURNER. Quite exciting news for the average twenty-something, amiright ladies?
There’s a good amount of counter space for how small the space is, and our pantry is in the corner of the kitchen (very smart!).
Anyway, I’ve woken up every day so far eager to make a meal.
However, this girl has been working a lot, I fear.
I recently signed onto a contract for a new project (very exciting things), but have boiled down cooking time to the bare essentials.
Making foods that will keep me going and energized.
Making foods on a tighter budget.
Making foods that don’t require a lot of dishes.
Less dishes, less cleaning: girl math.
With these things in mind, I’ve done my best using all that I have to hit what I need nutritionally (you know, fiber, protein, veg, carb, the whole shbang). Consequently, I stretched my produce a little too far, and have had quite the amount of “blinky” meals.
For example!
A few weeks ago, I decided to make a fun pasta dish using the eggplants I got at the farmer’s market that weekend.
It was a great project stretching how I can use the eggplant! I first sauteed it with just salt and pepper just to see what it was like on its own. Custardy, rich, salty, smooth; truly some of the BEST eggplant I’ve ever had.
And yet, a few days later, I cooked that same eggplant, blended it into a pasta sauce, made a gorgeous dish….and almost blew chunks during work.
For context: my “work” was performing a 3-hour musical…not exactly the best time or place to get sick while dancing and singing high notes for my life.
Thankfully, did not get sick, but we were on a slippery slope!
There have been other moments where I just push a little too far when it comes to my meals, trying to stretch them out and praying my stomach won’t hurt.
As I write this though, life has slowed down a teeny bit, so I have more time to pick fresher produce and not give myself minor food poisoning (yay!).
To wrap up, It’s been well over a month since my last writing session and all I can say is how much I love and thoroughly missed getting to sit and write! Praise God for busy seasons, but here’s to hoping for more quiet, writing times.
