Imposter Syndrome has been hitting BIG time the last few weeks.
For those who don’t know, I recently started a new job. WHICH I AM SO THANKFUL FOR, PRAISE GOD.
Like genuinely, would not be here without God. This definitely wasn’t in my post-grad plan, but I’m so grateful that God said, “SIKE” to my own plans because what He’s provided has been so much better.
Anywho, with that, comes a bit of self-doubt, but also a new space of needing to trust God even more because frankly, I don’t actually know what I’m doing.
It’s true!
I feel like that’s a recurring for most twenty-somethings, so I know I’m not alone in this feeling, but at the same time feel like I should know so much more at the ripe age of 23.
I rarely ever feel like an imposter in the kitchen.
This is my space. I turn off my brain, I just am.
I don’t have to prove myself, comparison is turned off, and it’s just about creating something that will literally fuel my body and my soul.
OKAY, I AM TOO SILLY TO GET THIS DEEP.
Anywho! Here are some things I’ve made midst being a 9-5 kinda gal
(not the musical, I WISH).
Banana Pancakes
Jack Johnson’s song, Banana Pancakes, is a CONSTANT stream of consciousness in my brain. I made these last weekend and they did NOT disappoint.
I improvised quite a bit from the original recipe, like using vanilla Greek yogurt for extra sweetness and protein and adding some oats for extra fiber.
These were so delicious and satisfying. I also splurged on some real maple syrup after my first paycheck, fun!!
Masoor Dal
Now that it’s under 100 degrees outside (barely), I’m so pumped for stew and soup season. Although, this recipe would be good no matter what temperature it is outside.
This Coconut Dal was comforting and so easy to come together. Definitely will be making this again!
Is Girl Dinner still trending?
Whether or not, we’re still having it!
For those who don’t know, Girl Dinner is a trending joke on social media of glorified snack plates (if that). It’s usually some equation of a dip, 1-2 dippable foods, maybe a fruit or veggie.
Hear me out, is it a full meal? Most of the time, no. Is it fun and whimsical and encapsulates girlhood? YOU BET.
Banana Bread
Okay, I bought a lot of bananas my first few weeks in Houston.
I made this my first weekend while my roommate and I binged “The Good Place”.
I used Claire Saffitz’ almond butter banana bread recipe which is just too good.
I swapped the yogurt for Labneh which made it even richer.
The only problem was I didn’t have any rising agents (i.e. baking soda and powder) so they ended up being super delicious dense banana bricks…
and finally: A Classic Snack in the DeGaish house
A folded-over Labneh and honey sandwich is a big comfort food for me and my family. It always hits the spot!
I remember haphazardly eating these on my way to school, an after-dinner treat, or just something in between meals to pull you over. Also, you also get honey on the back of your hand whilst eating this, it’s inevitable.
In conclusion, I’ve been eating A LOT of Labne and bananas.
I wouldn’t have it any other way.
