Humidity’s rising and it is HOT out.
Summer is here. We know this already.
We’ve all attended a barbeque by now, had a fun little drink by a body of water, and participated in all the gorgeous produce that this season has to offer, right??
Well, in all transparency, these are only half-truths for me.
I’ll be honest, I’ve spent the majority of my summer so far working indoors. I’m so thankful for my life at the moment, but my work-life balance has been a bit skewed, with much of the fun summer things being a thing of the past (aka, last summer).
Maybe I’m being dramatic.
But as I write this, sick as a dog and a little burnt out, I’d love nothing more than to eat something off a grill and enjoy the heat with some good friends.
But for now, here are some of the things I have indulged in that scream summer that I enjoyed pre-summer to get into summer.
I don’t know if that makes sense, but we’re rolling with it.
Club Sandwiches
I. LOVE. CLUBS.
It’s something I rarely ever eat or order because I fear my dad does make the best ones. Truly I’ve never had a club sandwich that has topped his. He’d make these a lot growing up as an easy-ish weeknight meal after teaching and coaching all day.
Perfectly layered, every flavor checkbox marked, delicious nostalgia.
They’re too good, I cannot lie.
Hot Dogs
No matter your status in patriotism, hot dogs in the summertime are a must in the US. At least during a barbeque or during a baseball game. I don’t make the rules.
Specifically during 1 dollar dog nights at a baseball game.
My dog topping lineup:
Ketchup, mustard, relish, and sometimes, potato chips.
*I did this on the fourth of July. The salty crunch of the chips with the dog?
Why don’t more people do this?? IT’S GOOD!
Paleta
If you don’t know, Paletas are Mexican frozen desserts (think popsicles, but not popsicles) typically made with blended fresh fruit or dairy-based flavors like chocolate, horchata, or coffee.
There’s a cute Paleta bar in my neighborhood near HEB that David and I went to back in May, and every time I go to the store my internal dialogue goes,
“OO! I need to go there again soon, that place is GOOD!”
Salad Season
Now, technically every season is salad season, but with summer produce the options are kinda endless! That’s all.
Farmer’s Market Meals
Speaking of summer produce, I LOVE a good farmer’s market! Truly, one of my favorite things to do/weekend plan!
It’s a perfect people-watching spot, with so many offerings and a little dangerous for your wallet but it’s fine……
Plus supporting your local community feels pretty cool too.
Most recently, I made this fun salad with some bougie greens from the farmer’s market.

I won’t lie, did my stomach hurt after making this? Yeah.
Could it have been the heat and chugging a delicious cold brew at the market?
Who’s to say?!
With Love,
Cara
