It’s an American classic, and everyone’s got opinions on what makes theirs the best. Or their mom’s. Or they’re favorite restaurant or store.
Regardless, it was a big favorite growing up, and my mom’s was the BEST.
Picture it. Winter, 2012.
I’m in my sixth-grade homeroom (computer skills) and our teacher passes out a Christmas party signup sheet for a potluck party.
Kids are putting in the typical (boring) answers.
cupcakes
soda
cookies
silverware
chips
I write in with a lot of boldness for a 12-year-old, chicken salad.
Was I the only kid eating it at the party? You bet.
Was it delicious? YOU BET.
I knew my mom’s chicken salad was a party in itself. This is typically what’s in hers.
chicken (hello)
mayo (OBVIOUSLY, IF YOUR CHICKEN SALAD DOESN’T HAVE MAYO, JAIL)
celery
onions
red grapes
pickles
salt and pep
That is all she wrote. You could add a little pickle juice if you’re feeling fancy.
It’s the perfect amount of rich plus acidity, plus crunch, plus sweet, plus tart.
IT CHECKS EVERYBOX.
It’s perfect in every season and is so versatile. You can eat it with a legit salad, or crackers, in a wrap, as a sandwich, or just as is.
Chicken salad is your oyster. Or. The world is your chicken salad.
