Spaghetti!
She’s an icon, a legend, and a huge staple for almost every American household.
Growing up, my family and I made spaghetti about two to three times a month.
It’s cheap, it’s filling, and makes for great leftovers (minus staining every piece of Tupperware you own).
My mom would always doctor up a plain jar of marinara with sauteeing onions and garlic, and using ground turkey vs. beef for a lighter but filling flavor.
If I think really hard, last week was the first time I made spaghetti for myself…
Like, actual spaghetti, not just any pasta with tomato sauce.
I had it so much as a kid, once I was out of the house that was the LAST thing I wanted! But now in my “adult” years, I’m craving the nostalgia more than ever.
I went a little further with the doctoring…
onions and garlic
like mother, like daughter
lots of chopped parsley
fresh, a little greenery
squash
I needed a vegetable, sue me
capers
Justine Doiron describes using capers as a “huh” factor to a dish and that is a perfect description
I of course top with lots of parm because I can.
Also, before any gets mad, I used linguini because that’s what I had and I like the texture of a thicker noodle for a thicker sauce.
And that’s all she wrote! Which, is more than what you’d expect, but it’s delicious!
Especially delicious when you pour it all over yourself. Classic.
